ZUCCHINI BREAD

ZUCCHINI BREAD


Combine:
                        3 eggs, well beaten
                        1 C. vegetable oil
                        2 C. sugar
                        2 C. zucchini, pealed, grated, and packed in cup
Sift:
                        3 1/ 2 C. flour
                        1/ 2 tsp. salt
                        2 tsp. soda
                        1/ 2 tsp. nutmeg
                        1/ 2 tsp. cinnamon
Add to above mix
Stir in:
                        2 C. raisons or dates, chopped
                        1 C. nuts
                        1/ 2 tsp. vanilla
Grease and flour two loaf pans and fill.
Bake at 350 for 75 minutes
