FRUIT CAKE

FRUIT CAKE


Mix together:
                        2 lbs. dates pitted
                        1 lb. Candied cherries
                        1/ 2 lb. Whole brazil nuts
                        1/ 2 lb. Walnut halves
Sift and sprinkle over fruit:
                        1 1/ 2 C. flour
                        1 1/ 2 C. sugar
                        1 tsp. baking powder
                        1/ 4 tsp. salt
Add:
                        4 large eggs, well beaten
                        1 tsp. vanilla

Stir well to mix.
Bake in two greased paper lined loaf tins, greased again.  Bake at 300 for 1 3/ 4 hrs.
5 1/ 2x9-1/ 2x3
I substitute candied pineapple for part of the cherries or dates, sometimes.
Wrap each cake in a wine soaked cloth and let set in airtight tin or carton for 4 to 6 wks. to ripen.
Can be frozen to keep indefinitely.
