OATMEAL CAKE
Pour 1 1/ 4 C. boiling water over 1 C. quick oats.
Let stand 20 min. Stir with fork.
Cream:
1/ 2 C. shortening
1 C. brown sugar
1 C. white sugar
Add:
2 eggs, one at a time
Add:
oatmeal mix
Sift:then add to above
1 1/ 2 C. flour
1 tsp. soda
1 tsp. cinnamon
1/ 2 tsp. nutmeg
Bake at 375 for 30-35 min.
Icing:
Mix and bring to boil:
2/ 3 C. brown sugar
1 C. coconut
1 C. nuts
6 Tbsp. oleo
1/ 4 C. cream or canned milk
Add:
1/ 2 tsp. vanilla
Pour over warm cake. Put under broiler until slightly browned.
