Baked Potato Soup

  Amount  Measure       Ingredient -- Preparation Method

  4                     potatoes -- large
     1/2           cup  butter
     1/3           cup  flour, all-purpose
  1 1/2           cups  milk, skim
     1/2           cup  water
  1           teaspoon  salt
     3/4           cup  onion -- chopped, sauteed
     1/2      teaspoon  pepper
  1 1/2           cups  cheddar cheese -- shredded
  8                 oz  sour cream

Bake potatoes & cool.  Cut in half lengthwise and scoop out potato.
Melt butter and saute onions.  Add flour, stirring constantly.  Gradually stir in milk.  Cook over medium heat, stirring constantly, until thick and bubbly.
Slightly mash the potatoes and add to soup.  Add salt, pepper, cheese.  Cook until heated.  Stir in sour cream.
