FRENCH APPLE SLICES

FRENCH APPLE SLICES

Sift:
                        2 C. flour
                        1/ 2 tsp. salt

Cut in with pastry blender:
                        3/ 4 C. lard
Add:
                        2 egg yolks, beaten
                        6 Tbsp. water
                        1 Tbsp. lemon juice
Sprinkle this mix over flour mix and blend lightly.  Divide into two parts.  Roll each to fit a 9x13 jelly roll pan.

Filling:
                        8 cooking apples, sliced.(Johnathan or Golden delicious)
                        or 3 cans (2 1/ 4 C. per can)
Combine:
                        2 Tbsp. flour
                        1/ 4 tsp. salt
                        1 C. sugar(1/ 2 white,1/ 2 brown)
                        1 tsp. cinnamon
                        3/ 4 C. raisins

Add to apple slices and toss to coat.  Place slices in rows on the crust so it will slice easier.  Add 2 Tbsp. oleo cut in 8 slices, place evenly over apples.  Top with remaining crust.  Cut steam vents and bake at 350 till done.  When cool, spread with a thin icing.
Icing:
                        1 C. conf. Sugar
                        2 Tbsp. butter
                        1/ 2 tsp. vanilla
                        2 Tbsp. warm milk

Blend well and drizzle over top and let cool.
Cut in 24 slices.
